It was dense, but the crumb was like velvet. I used almond flavoring and almond slices on top, but
the ricotta makes it just a bit twang-ie, so i'll try it with lemon and lemon zest next time, although the almond/vanilla was great and I added a tsp more flavoring to mellow it more. I just liked the idea that I was eating something "healthy", the ricotta, with each slice.
