I second Richard's Austrian recipes.

puff pastry (I've never had any luck with pastry)

Roast chicken (it's my favorite, but I've never actually made it)

Steamed mussels

And I've always wanted to make fresh bread every week, but have never gotten around to it.

I'm sure there's more. I've got pneumonia at the moment, so I'm not cooking much of anything.

Ooh, this is hard...there are so many things I'd like to try

but don't have the time. I have a large folder of things from here that I'm still trying to work through. I would love to cook my way through the Time/Life Foods of the World series. Other things I would like to try would include buttermilk biscuits like my Grandmother made, artisan breads, the ultimate cinnamon rolls, advanced sugar work techniques and european style pastries.

 
I'm an excellent baker but rolling things out is not my strong point. Once lost

77 pounds on Weight Watchers and kept it off for a long time. Hang in there, but I'd definitely agree with taking that book back to the library for now.

 
Mine are so simple, fresh lasagne sheets, individual Beef Wellingtons using the recipe in

Fine Cooking magazine and the no-knead bread recipe that uses a dutch oven, I'm afraid I'll ruin my dutch oven, lol.

Oh, and pot stickers and spring rolls! I love both, have lots of recipes but, for some reason, have never made them.
