eggs for catered breakfast

Hi,

I am looking for tips on how to pre-cook 2 egg dishes for catered brunch.

One is scrambled eggs with cream and butter, the other is a sausage,egg,cheese type casserole,baked in the oven for 1/2 hour.

I have 2 chaffers for serving, but need to drive 20 minutes til I get to the Home, and then reheat.

My dilema is how to do that without overcooking the eggs?
