Has anyone candied kumquats before?

I'm thinking they would be yummy in lieu of candied oranges in the candied orange pecan biscotti recipe.

I have a box and I am not afraid!

Just wondering though if anyone has done it. My thought is to cut them in half but am unsure if I should scoop out the flesh or just leave it??

I've never done them before, however, I did bring back a jar from

Gourmanyat & Son Royaume in Paris. They are small, about the size of a quail egg, and whole. I slice them and toss in a curried chicken salad, or on Ina Garten's French Bark. They are still juicy inside.

The ingredients: kumpuat, sucre.

I did them once. I think I just simmered slices in a sugar syrup until they

were sort of see-through and crinkled. You didn't need to scoop out the insides.

They were supposed to be fantastic with cheese, but I didn't think they were anything special and didn't keep the recipe.

Thanks all, I am about to take leave of the PC and start the syrup. My parents are coming in a few

hours and The Roost is going to smell great. I also bought a load of tomatoes that I'm slow roasting with basil and some lavender/rosemary artisan sea salt. They are just starting to give off a fragrance!

I made kumquatcello this year and it is SOOO good! Very easy too.

Put 1 cup sugar in quart jar. Fill to top with washed whole kumquats. Fill with inexpensive vodka. Wait 40 days in dark place ( the jar, not yourself!) Invert a few times to insure sugar dissolves.

Has anyone ever seen the old W.C. Fields movie called "It's A Gift"?

I cannot hear the word kumquats without thinking of that movie. I love old W.C., Laurel and Hardy, Abbott and Costello, Three Stooges, etc. I just gave away my comedic level of maturity. smileys/smile.gif
Anyway, if you can get your hands on a copy of "It's A Gift" give it a try. Funny!
