Here's a challenge for you: a pot-luck main dish (feeds 8) for

Marilyn, my go-to store for meat is Winn Dixie. Their meat is really

good and they are fantastic on the price. Lots of BOGO that I take advantage of and freeze. You're gonna have to skip the organic for this if you want to keep the price down. I personally don't get the advantage of organic when it comes to taste. But I know there are lots of people that do. Your food will taste delicious no doubt and I'm pretty sure they won't know what ingredients you use.

What a great idea, Ang. Baked pots in one crockpot and pulled pork or chicken in another. Chicken

would probably be cheaper than the pork. And a bag of taters is inexpensive as well. Love it!

Oh I will, I definitely well. It sounds delish!

May I ask what side dishes you think would go well with the dish, in addition to the rice??

These luncheons end up with 20 to 40 people. Entrees must feed at least 8. Any

cash funds are used to buy bulk plates/cutlery/cups and gift cards for games they play during the luncheon.

well, they would then take the money and buy food. But the coordinator is quite...bossy and comes

right up to people and tells them what he WANTS them to bring.

For example, my cubemate's wife makes fabulous Ropa Vieja. Really good. In fact, last year it was voted "best dish" for the potluck and he won a $15 gift card. However, he spent $60 in ingredients to fill a 6-qt stockpot.

This year, the coordinator stopped by and TOLD HIM that he had to bring that same dish again because it was so good.

I convinced him to say NO, as we had privately discussed how expensive these $10 potlucks were getting for both of us.

This is one of the reasons I want to just spend $10, but still make something tasty.

Sounds like you and your cube mate need to do a little education

with those in charge of running this. I'll just bet that bossy coordinator honestly has no idea just how much it cost to make the food. And how many years ago did they set the $10 amount?

oh honey...he knows. He walks around with take-out containers afterward & takes leftovers home.

Yet ANOTHER reason why I want to stop spending so much money.
