Let's see, here's my top of "everything" >>

In random order:
1) Silver Palate Salmon Mousse. I have made it several times and love it.
2) Margs fish soup with saffron boomed into my list on New Years Eve. Definitely a keeper!
3) Evelyn's briami. It's a staple in this house.
4) Gayle/MO's hot chocolate fudge. Works every time!
5) Richard in Cincy's Lebkuchens recipe - we make it every Christmas.
6) Marilyn's gingerbread story is read over and over again for entertainment purposes. LOVE it! It always makes me laugh. smileys/bigsmile.gif

...I know there are more recipes I use regularly, but these are the ones I have on top of my head righ now. (I'm at work and my recipe binders are at home and my head is still tuned on vacation mode. Sorry.)

I searched for the slow cooked ginger duck recipe.

I didn't find it. I have 2 ducks in my freezer and am looking for ideas.

You may use any leftover cheese you wish, such as Cheddar, Parmesan, Provolone, Fontina, Mozzarella, Camembert or St. Andre. Make sure that you use a combination that is not too salty.
Cindy's notes: If some of the cheese is cream cheese this will be easier to spread and will be more cohesive. Don't be surprised if you need to use lots of wine to get the right consistency.
1 pound left-over cheese, at room temperature
1/4 cup (or more) dry white wine
3 tablespoons unsalted butter, softened
2 tablespoons fresh parsley leaves
1 small clove garlic
Remove any rinds from hard cheeses. Grate hard cheeses and cut others into 1/2-inch cubes. Place cheese, wine, butter, herbs, and garlic in a food processor and blend until smooth, approximately 2 minutes. Serve immediately or refrigerate for at least 1 hour for a firmer consistency. This can be stored in the refrigerator for up to 1 week.

Creamy Olive Spread
Adapted from a recipe given to me by Marge French
When you first make this it will seem way too salty. It must rest 24 hours. The simplicity of this recipe belies its great taste, it is more than the sum of its parts.
6oz cream cheese, softened
½ cup mayonnaise
1 cup salad olives, chopped
½ cup slivered almonds, toasted and chopped
2 T olive liquid
Combine all. Cover and chill 24 hours.
