We both like to cook so it's homemade - they know us and would expect nothing less smileys/smile.gif

 
Although, if you look at the recipes you'll see we aren't above taking shortcuts

Its either that or they'd have to bury the cooks on day 3 and forage for berries

 
REC: Chicken for burritos

This is my sisters recipe and she doesn't measure...its all left to your taste:

Chicken Burrito Filling

Ingredients:

4 half breasts chicken breast (boneless, skinless)
chili-garlic paste
1 sm. can (3 1/2 oz.) ortega chiles, chopped
ancho chili powder
chipotle chili powder
cumin powder or seed
dried onions

Directions:

1. Combine everything except chicken and make a paste.

2. Put chicken onto a square of heavy duty foil and spread with paste.  Seal foil and place in baking pan.

3. Cook at 250-300 for ??? (until done)

4. When done, drain off juices and reduce in saucepan. 

5. Shred chicken and toss with reduced juices.

 
REC: Oven-Fried Chicken

I made this again for dinner and came up with some measurements that worked really well, so I've edited it:

Oven-Fried Chicken

Ingredients:

1 whole chicken, cut up
3 cups buttermilk
1/4 cup Tapatio, or hot sauce of your choice
1/2 cup butter
3 cups Bisquick
1-1/2 tsp. Cavender's Seasoning
1/2 tsp. garlic salt
2 tsp. paprika
1/2 tsp. onion powder
1/2 tsp. black pepper

Directions:

1. Marinate chicken in Tapatio and buttermilk to cover for an hour or two.

2. Combine Bisquick and seasonings in gallon ziplock.  Melt butter on jelly roll pan/cookie sheet.

3. Put drained chicken in seasoning mix and toss until coated.  Put on baking sheet skin side down to coat with butter, then turn skin side up.

4. Bake at 425 about 35-45 minutes, or until deep golden brown (20 min for breast meat)..

Notes: The drippings make great gravy!

Sloppy Joes

Recipe By: Cook's Illustrated

Ingredients:

1 lb. hamburger
1 onion, diced
1/2 bell pepper, diced
2 cloves garlic, minced
1/2 tsp. chili powder, Optional: chipotle
1 c. tomato puree
1/4 c. ketchup, Optional: sub. 1/2 w/BBQ sauce
1/4 c. water
1 tsp. brown sugar
hot sauce, to taste

Directions:

1. Brown meat with onions, peppers and garlic.

2. Add remaining ingredients and simmer till flavors meld.

 
UPDATE!! For anyone wanting to make the barbacoa, here are some additions...

I made it again tonight for just me and hubby. I baked the 2.5 lb. tri tip beef at 300 degrees for just under 3 hours and it was perfection! Shredded, I gleaned about 5+ cups of meat which makes a generous 30 tacos smileys/smile.gif
