mmmmmm, for Easter Brunch, Salmon Potato Pancakes with Jalapeno Jollandais and poached eggs

This was on our local wednesday food show yesterday and looked so yummy and a good way to use leftover salmon. the recipe calls for canned salmon, but the chef used leftover baked salmon. He also shredded or riced the cooked potatoes. I can't eat regular potato pancakes that are cooked in a bunch of oil---it makes me sick, but these pancakes are cooked on a griddle with just a bit of oil. They basically just brown on both sides since you start with cooked potatoes.
