My Saturday Six (with any luck I'll get it all done today)

Here are two I found for my mom, Elaine...

(I think the bouillon is much too high in these, personally, as someone who's sensitive to sodium! If I make these, I'll probably leave out almost all of the bouillon and just add broth to the recipe card.)

Patchwork Soup Mix
1/2 cup barley
1/2 cup dried split peas
1/2 cup uncooked white rice
1/2 cup dry lentils
1 tablespoon dried parsley
1 teaspoon granulated garlic
1 teaspoon ground black pepper
1 teaspoon salt
1/2 teaspoon garlic powder
1 teaspoon Italian seasoning
1 teaspoon dried sage

In a wide mouth pint jar, layer the barley, split peas, and lentils.
In a small plastic bag, combine the parsley flakes, minced garlic, pepper, salt, garlic powder, herb seasoning and sage.
Decorate jar lid and attach seasoning packet with ribbon to jar.

Attach a recipe card with the following directions: “1. Empty jar into a colander, rinse and pick over beans. 2. Place beans in a large stockpot and cover with 10 cups water. 3. Stir in 1 chopped medium onion, and the seasoning packet. 4. Bring to a boil. Lower heat, cover and simmer for 1 hour, stirring occasionally. Check after 30 minutes and add additional water if necessary.”


Friendship Soup Mix
1/2 cup dry split peas
1/3 cup beef bouillon granules
1/4 cup pearl barley
1/2 cup dry lentils
1/4 cup dried minced onion
2 tsp. italian seasoning
1/2 cup uncooked long grain rice
1/2 cup alphabet macaroni or other small macaroni (can be put in a plastic sandwich bag (or cheesecloth—or cute fat quarter) to make it easier for the recipient to get out of jar )

In a 1-1/2-pint jar, layer the first eight ingredients in the order listed. Seal tightly.
Yield: 1 batch.

Instructions to attach to jar:
“Friendship Soup Mix:
Additional ingredients:
1 lb. ground beef
3 qts. water
1 (28-ozs.) can diced tomatoes, undrained

To prepare soup: Carefully remove macaroni from top of jar and set aside. In a large saucepan or Dutch oven, brown 1 lb. ground beef; drain. Add the water, tomatoes, and soup mix; bring to a boil. Reduce heat; cover and simmer for 45 minutes. Add reserved macaroni; cover and simmer for 15 to 20 minutes or until macaroni, peas, lentils and barley are tender.

Yield: 16 servings (4 quarts)

And here's a risotto one, in case it sounds interesting:

Risotto with Herbs and Sundried Tomatoes
3-1/2 C. arborio rice
3/4 C. snipped dried tomatoes
8 chicken bouillon cubes (I would halve this amount—there’s enough sodium in half of one of those cubes to really suffice.)
3 T. instant minced onion
2 t. dried oregano
1 t. instant minced garlic
1 t. dried rosemary
1 t. dried basil leaves, crushed
1/2 t. pepper

Makes 4 half pint jars.

Divide ingredients equally among 4 half-pint canning jars; layering attractively. Add additional rice or tomatoes to fill small gaps if needed.

Gift Tag Directions:
“Bring 3 cups of water to boiling in a large heavy saucepan. Add contents of one jar. Cook and stir till boiling; reduce heat. Cover and simmer for 20 minutes (do not lift cover).
Remove from heat; let stand, covered, 5 minutes. Rice should be tender but slightly firm. Stir in 1/4 cup freshly grated Parmesan or Romano cheese.
Makes 3 cups.”

How about Bettty's Fruited Rice Curry

FRUITED RICE CURRY

1 cup long grain rice
1 tablespoon instant minced onion
2 teaspoons curry powder
2 beef bouillon cubes
¼ cup mixed dried fruits (i.e. apricots, prunes, plums), chopped
½ teaspoon salt
2 tablespoons light raisins
¼ cup slivered almonds

Method: Combine all ingredients and package in an airtight container.

When ready to make: Combine rice mix with 2 ½ cups water and 2 tablespoons butter. Cover tightly. Bring to a boil, reduce heat and simmer for 20 minutes.

Taco Chili Mix:
1 cup dried kidney beans
1/2 cup dried pinto beans
1 (1 1/4-ounce) package taco seasoning mix
1 (1-ounce) package buttermilk salad dressing mix
3 tablespoons dried minced onion
1 teaspoon chili powder
1/4 teaspoon ground cumin
1 1/2 cups corn or tortilla chips
Taco Chili:
1 packet Taco Chili Mix
4 cups water
1 (11 3/4-ounce) can diced tomatoes and green chiles
1 (16-ounce) can tomato sauce
1 pound ground beef, cooked and drained


For the mix: In a 1-quart wide mouth jar, layer kidney and pinto beans.
In a small bowl, combine taco seasoning mix, dried salad dressing mix, onion, chili powder, and cumin. Wrap seasonings in plastic wrap or cellophane and place in jar.

Put chips in a bag and place in jar. Decorate with ribbon or fabric.

For the chili: Place beans in a large bowl, cover with water and soak 6 to 8 hours, or overnight. Drain and add to a Dutch oven. Add seasoning packet, water, diced tomatoes and green chiles, tomato sauce, and ground beef.

Heat to boiling, cover and reduce heat to low. Simmer for 2 hours, or until beans are tender. Serve with corn or tortilla chips.

* Made Chicken Tinga again. Served on Polenta (lucky stroke of genius!)
* Attended my first Book Club meeting, so fun! I brought some Ossi di Morto cookies. Plan to make more this week!
* Making "Almost Pesto" with remaining fresh Basil from garden...adding parsley to keep the lovely green
* Buying MORE local, fresh walnuts even though I have LOTS in the freezer from years past cause they are SO good and $0.80/lb
* picked bunch of Fuyu persimmons and going to try candying them this year to use like candied fruit in holiday "whatever"
* drying Rose Geranium for those very lovely, very popular scones

 
Careful, Pat. The emptier the freezer the harder it has to work and the higher your electric bills.

 
REC: Turkey and Brie Panini

Turkey and Brie Panini


Amount Measure Ingredient -- Preparation Method

2 loaves ciabatta
1 pound turkey -- sliced
1 pound brie -- sliced
1 bunch arugula baby
1 cup stuffing
4 tablespoons cranberry sauce
4 tablespoons mayonnaise
2 tablespoons butter -- melted

Preheat the George Forman Grill or panini grill.

Mix cranberry sauce and mayo.

Slice the cibattas and spread top and bottom with cranberry mayo mixture.

Layer with turkey, brie, stuffing, and baby arugula place top mayo side down.

Brush both sides with melted butter and heat in the grill until marked.

I've always wanted to go and know some of the local chefs that go but I want a 'buddy' to go with.

Is Geranium the same as we call Pelargon, you think?

I'm so intruiged about drying geranium petals and using them in cooking. What kind do you use?

I know that for Pelargonias, some have a fragrant smell and others don't smell anything aqt all. Do you use fragrant petals?

 
You would be surprised what lengths I go to so I don't forget my life. smileys/smile.gif Headcam has been suggested

I snap photos like crazy, keep a detailed calendar, and carry 2 notebooks with me almost all of the time--1 is a journal, the other is for notes. I'd be lost without them. Being this busy is tough, maintaining it is even harder! (I know, woe is me, eh?)

I seriously want to get an iPhone before I go so I can upload photos from there but I'm having a hard time stomaching the $$$ right now.

 
I'm not sure about the names as I am ignorant when it comes to flowers (among many other things of..

which I am ignorant) But I dry the leaves and crumble them up to use. I only have used rose Geraniums becuase I've killed my other lemon one.
