Green Chile Cheese Spread - I posted this one a long time ago on Recipezaar and renamed it

Three Cheese Green Chile Spread. I still haven't tried it myself - do you believe it?

GREEN CHILE CHEESE SPREAD

A make-ahead cheese spread. Serve with corn chips, tortillas, or your favorite assortment of crackers.

Ingredients:
4 ounces cream cheese, softened
1/4 cup sour cream
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 (4-oz.) can Diced Green Chiles (one reviewer used 2 cans)
3 tablespoons sliced green onion
1/2 teaspoon hot pepper sauce
1/2 teaspoon chili powder
1/4 teaspoon ground cumin

Directions:

COMBINE cream cheese and sour cream in medium bowl. Stir in cheddar cheese, Monterey Jack cheese, chiles, green onion, hot pepper sauce, chili powder and cumin. Mix well. Refrigerate until ready to serve. *(Note: reviewer served it warm - she mixed ingredients in small crockpot, heating until cheese was melted).

Makes 2 cups

I love smoked salmon. We never had it when we were kids but the very wealthy couple I used to

babysit for always saved me a bit when they were having a party. I still think of it as "food that rich people eat"!

~whispers~ this is my all-time favorite dip - but my favorite dipper is Fritos,

though I think just about anything tastes good with California Onion Dip on it!

 
I have a similar thrill with black olives -

we only got to have them once a year, usually on New Year's Eve...

I'm making it for my cookbook club...out of the Bouchon cookbook. The ingredient list is almost identical.

 
I have to make clam dip with Ruffles Potato Chips for every family gathering

or there are so many disappointed faces. It's just the old one, cream cheese, chopped canned clams, a little Worcestershire Sauce, and a dash of Tabasco. I once added a clove of garlic and you would have thought I committed a Cardinal Sin.

 
Hi Cathy, what do you like as dippers for this? Somehow, the idea of dipping celery sticks into

warm dip doesn't sound that appealing, though I haven't tried it.....

 
You could dress it up a little with chopped walnuts and crumbled blue cheese.....

Really good, but you wouldn't be fooling anyone, and they might prefer the original anyway.

 
Lisa, I don't recall exactly what I had.....

but if I make it again, I'd have melba toast or crostini to spread it on, and perhaps some cucumber spears or slices to dip into it.
It would look pretty in Belgian endive leaves, and be easier to eat that way.
I think crunch without an overpowering flavor is what I would look for.

 
It's also a great spread for finger sandwiches. I sprinkle the filling with extra chives which forms

a contrasting green stripe when you cut the sandwiches.
