Sandwich dilemma....need sandwiches to serve 20

After checking around, I was astounded at the prices for a sandwich tray so am deciding to do my own. Outside of the occasional pb&j or blt, I haven't ventured into sandwich making. I found the sit sandwich and muffaletta in T&T. Do they need to be made with a round loaf?? I was thinking of long loaves that I can slice easily.

Everything needs to be ready the night before. I'm not even sure how to start my shopping list!!

Paella doesn't throw me...any cake, pie or cookie - bring it on...but these have me stopped in my tracks! HELP!!!

 
Antipasto Wraps

ANTIPASTO WRAPS

INGREDIENTS:

8 ounces light cream cheese, slightly softened
2 tablespoons fresh basil, snipped
1 garlic clove, pressed
6 8-inch sun-dried tomato tortillas
6 romaine lettuce leaves
3/4 cup mozzarella cheese, shredded
1/2 cup pitted ripe olives, sliced
1/2 cup roasted red peppers, diced
1/2 cup water-packed artichoke hearts, chopped
4 ounces salami
4 ounces ham

DIRECTIONS:

Mix cream cheese with the basil and garlic.
On each tortilla, spread about 2 tablespoons of this mixture on the tortillas to within 1/4 inch of the edge.
Layer with romaine, salami, ham, and cheese.
Next, layer on the olives, roasted red peppers, and artichoke hearts that you prefer.
Tightly roll up the tortilla and cut in half on the diagonal.

Chicken Salad Croissants

CHICKEN SALAD CROISSANTS

INGREDIENTS:

2 cups cubed, cooked chicken
1 cup cubed Swiss cheese
1/2 cup dill pickle relish

2/3 cup mayonnaise
1 tablespoon minced fresh parsley
1 teaspoon lemon juice
1/2 teaspoon seasoned salt
1/8 teaspoon pepper
Lettuce Leaves
6 croissants, split

DIRECTIONS:

1. In a large bowl, combine the chicken, cheese and pickle relish. Combine the mayonnaise, parsley, lemon juice, seasoned salt and pepper; add to chicken mixture and mix well.
2. Place a lettuce leaf on each croissant; top with about 1/2 cup of the chicken mixture.

Yields: 6 servings

If it doesn't have to be fancy putting out meat & cheese & bread trays

with condiments holds up a lot better than trying to make most of them the night before. You could also put out bowls of things like chicken or tuna salad.

 
They have to be already assembled and ready to grab - no room or time for a buffet smileys/smile.gif

 
I was thinking wraps too, with colorful tortillas. use herb cream cheese for the spread

and just some ham or turkey and some sort of cheese(or not) and maybe some juliened carrots and celery for crunch(they wouldn't get soggy as fast as lettuce) these can be wrapped up individualy in plastic and easy to grab and go.
