Sandwich dilemma....need sandwiches to serve 20

Pain Bagnat. This is easy to assemble on a baguette the day before. There are many versions

Traditionally it included tuna, egg, tomato, anchovy and other Nicois ingredients. But if you google you'll find all kinds of things calling themselves Pain Bagnat--chicken, veggie etc. Anything on a baguette.

Also what about cold roast beef on baguette with horseradish cream? Did Wigs post her recipe yet?

 
Since you live in LA, check out the Bread Bar for little brioche buns. I order them through a local

store when I need small sandwich buns. Love 'em.

 
This is a great idea. Typically, the bread 'bathes' in the liquids of the ingredients overnight &

just gets better. And they could all be individually wrapped ( just like in a French train station)

 
It's easy to get one:) Had to get one for my business and I love having it!

I buy lots of gifts (my business is party favors and gifts)that way an love going to the trade shows.

Can't quite remember what I did to get it but I think it was filling out one state 'resellers' form.

 
On mini baguettes. I love those train station sandwiches! But you could do it on a full size

baguette and slice it any size you wish.

 
I just did wraps for 16 people and it worked out great and

was pretty economical. It actually was for 26 people. I gave them a list and let them put in their order. The morning of the luncheon I made them, but I have made them the night before too and that worked out great.
I did some salads and some deli meat ones. I added in some shredded carrots and broccoli slaw to give some crunch. The trick is to use cold fillings and wrap them in parchment paper. I used color coded rubber bands so that I would know which ones were which, and they held the parchment paper in place.
Think of a drive through burrito shack (sigh) how they wrap their to go burritos. Quarter some Kosher pickles and you are set. I used the large burrito-sized tortillas.
