Having trouble getting your Spritz cookies to form properly? When your dough doesn't want to stick to the baking sheet, put the sheet in the freezer for an hour or two, while keeping the dough at room temperature. Then when you press out your cookies onto the frozen sheet, the dough will stick to it just like your tongue sticks to a frozen metal pole when you lick it (assuming you've ever been dumb enough to try this).

Don't forget you can pick up your mistakes and put them back into the press.

Avoid cookie presses that use a rachet mechanism. They only allow you to expel pre-set amounts of dough, which may or may not work for your particular recipe. It's better to use a cookie press that has a smooth mechanism that allows you to determine exactly the amount of dough to press out for each cookie. My favorites are the old Mirro Cooky Press and the Wear-Ever Super Shooter electric cookie press, both vintage items available every day on eBay.
