Watercress and Duck Salad.....

Duck Breast 200g (about 1)

Watercress a good fistful

Mango sliced julienne

Sesame seeds, toasted about 2 tsp

2 TBL soy sauce

1 TBL sesame oil

Lime juice of 1 lime

Palm Sugar 1 TBL or (1 TBL golden castor sugar)

Heat a non stick pan (medium heat)

Score the duck skin

Fry skin side down about 8 mins dont rush this as the fat must melt slowly.

Turn the breast over for another 4 mins

Drain for 5 mins but dont pierce the meat

Whisk the dressing together.

Arrange the watercress and mango slices and sliced duck breast.

Drizzle with dressing and toasted sesame seeds

Should serve 2
