What's your Friday night dinner

That's what it is. The dinner was good but everything was beige! The dessert table had five kinds

of pies, five kinds of cake, about a dozen different cookies and several puddings. The Amish do like their sweets!

 
That was an oldie but a goodie at grandma's house

when I was growing up. She called it scalloped chicken, however. It was also made with pork, but that was called pork dressing (or informally, piggy pudding). This is sinful, but she would serve it with mashed potatoes, all covered in the gravy. Talk about carb-loading!

And that sounds about right on the color spectrum: a proper feast plate should be white, beige, and brown. LOL

 
Yup, there sure is a difference. I like to use both.

One of my favorites is to slip a little unrefined coconut oil into melted chocolate for coatings. I love the chocolate and coconut flavor. Also a bit in frostings to give a bit of that flavor to chocolate cakes. It's also very good to use as the oil in a thai coconut rice where you want the flavor of coconut with the chiles, cilantro, etc.

 
This recipe is great--I used to make it for my Dad when he was alive, one of his faves.

It freezes beautifully too, in case anyone is looking for "freezer meals" for older folks. I would freeze little orzo pasta portions separately to accompany the meal. I must have posted this a few years ago, too good not to share. Thanks for the reminder Pat!!

 
Good to know that it freezes well also. I'm curious, did you ever tweak it at all?

I was thinking it might be nice to add a little sliced onion along with the bell pepper strips next time. Not that the recipe needs any tweaking, I did enjoy it the way it is written.

I'm sorry for your loss, Mo. Your Dad was clearly blessed by the loving and delicious meals you made for him.

 
You can, but I don't do anything on sweet potatoes for roasting. I don't find the

difference very great, and I don't love coconut, but......

 
Thank you, Sally, it sounds very flavorful, will give it a try. He has a number of

other recipes which sound good too, like most of his cauliflower recipes (he's clearly addicted to cauliflower), and the lemon garlic chicken zoodles, and chicken tikka masala, Spanish chicken with chorizo and potatoes, etc. Looking forward to trying some of the recipes. Just wish I had his calorie-burning-capacity, lol. Thanks for sharing his blog.

Same-ish veggie saute

We love a very similar recipe using asparagus instead of broccoli, along with the peppers, onions, garlic, mushrooms (sliced portobellos) and topping with lemon zest, lemon juice and lots of fresh ground pepper. Would be just as good with broccoli! Colleen

 
Friday night birthday dinner at 30,000 feet

Sack dinners of smoked turkey/apple/cranberry croissants, blanched sugar snap peas with baby carrots and a peeled clementine, banana and pretzel chips, Kashi chocolate almond bars, and hard candy mints. Dinner was magnificent - at least DH said so smileys/wink.gif. Thank-you all for your suggestions in previous threads. Colleen

as a lot of things disagreed with him, so no onions, I would swap the prosciutto occasionally with pancetta, depending on what I had in the fridge. I'm sure some Penzey's mural of flavor and some garlic powder were sneaked in. smileys/smile.gif

Richard - any tips?

We have not-so-good already cooked steak from dinner last night - no grill here so they are a tad over-broiled (and not properly seasoned, which I believe is the biggest problem). I was thinking of slicing, sautéing to just warm in butter, seasoning and serving with some type of egg for breakfast. How did you do yours, please? Colleen
