My Saturday Six...

OK my cheeky darlings, Curious got me LOL here's the skinny....

he's first generation Italian American.

Don and I have known him and his ex for years but not well. (the fact that he never has said one bad thing about his ex says a lot about his charactor)

he loves my Italian cooking and loves to cook himself.

the few times we've been out, he is the perfect gentleman and perfect, attentive and considerate companion.

he's interesting, intelligent and a good sense of humor.

we can spend hours talking.

he thinks I'm the most fascinating woman he's ever known.

but.... I can't get beyond a hug yet. honestly, I'm a bit shy about even a kiss right now. so many years with Don and in many ways, and possibly always, I'm still in love with my husband.

but, who knows what time will bring. the one problem is he just adopted a resuce pooch. dearest little thing you'd ever want to meet but I have 4 cats and two are terrified of all dogs, even the little ones.

I didn't feel like cooking or company tonight and just wanted a quite evening to myself. we talked earlier and next weekend I'm making the ravioli he's been waiting for me to cook for him. also, we're making plans to crank out some pasta together.

I went ahead and crafted my own version of REC: Deviled Ham, enjoy!

Heather's Homemade Deviled Ham:

half of a ham steak, cut into largish chunks
3 green onions, chopped
6-7 cornichon or equivalent amount of dill pickle
1/4 of a chipotle chile, seeds removed
1 T Creole mustard1/4 c mayonnaise
several dashes of Worchestershire sauce
salt and black pepper to taste


In a food processor add green onions, chipotle chile and cornichons and pulse until well chopped. Add chunks of ham and pulse until ham is finely minced.

Then add seasonings: Creole mustard, Worchestershire sauce, grinds of black pepper and mayonnaise, and puree until smooth. Taste for salt and spice. If you like things pretty zippy you might want to add more chipotle, but to my taste the 1/4 chile was just enough to invoke that wonderful sunshine in the mouth feeling. Remove deviled ham to a bowl and chill for several hours or overnight.

I used this to make my family's club sandwiches, which are on English muffins with tomatoes and sour cream. I wrote about this today so please feel read the full shebang if you'd like.

Hey Karen, I've been making a stir fry with the Thai Basil - soooo yum!

Here's as a basic guideline for the stir fry - just use whatever vegetables you have on hand.

2 lbs. boneless skinless chicken thighs, cut into strips
2 cloves garlic, minced

2 Japanese eggplants, cut into half moons
1 onion, cut vertically into strips
1 large carrot, cut into large julienne strips
1 red bell pepper, cut into strips

2 tablespoons fish sauce
1 teaspoon sugar

1 large handful Thai basil

Preheat wok or large saute pan, add oil. Add chicken pieces and garlic, and stir fry until just about cooked thru. Remove from pan.

Add eggplant, and a little bit of water. Cover, and let steam until eggplant softens.

Add onions and carrots, and stirfry until softened slightly. Add bell pepper strips, and stirfry another minute or so.

Add the chicken back to the pan.

Combine the fish sauce and sugar, and add to the pan. Add the basil, and stirfry for an additional minute or so.

Serve with lots of rice.

The first time I made it, I used the eggplant, onion, red bell pepper and carrot. The second time I made it, I used canned baby corn, cut into bite sized pieces, onions and carrots.

I really like the eggplant, but I didn't have any the second time I made it. (It was better with, than without.)

Love the fresh basil in this!!

 
My Saturday six

wondering what time DD is getting in the airport

taking a survey of leftovers to see if I can get out of making dinner tonight

trying to figure out what to do with my over-salty, brined roasted chicken

Looking in the cupboard to see if I have all the ingredients to make the tres leches cake DH is craving

getting in quality lap-time with the dog who is depressed after spending time in my sister's HUGE backyard, then has to come home to his little one

wondering if popcorn can count as dinner just this once

 
Maybe this is off, scientifically, but could you un-brine the chicken (sorta) by

boiling it for a while? If it's destined for stew or enchiladas, maybe it would work.

We first went to Woodhaven, (Queens, I believe); then drove literally 15 minutes to the aquarium.

Just looked it up; it is Coney Island. Not Queens, but really close! I have had experience in Manhattan, after that, it is confusing to me.

and it's speaking to me...just found it for $3.90 at half.com and ordered it. We can cook from it together. :eek:)

Samosas sound good too, forgot about those. Ended up letting my girlfriend (we're going together for this Girl's Night Out overnight in the wine country) choose the appy since I was working a big catered event yesterday and didn't get home til 1:30 this morning. Will see what she came up with. I just adore Indian food, it's perhaps my all-time favorite cuisine...I really should cook more of it at home.
