OK, I just checked my recipes and they all have a stick of butter in

them. no wonder I love risotto so much! please ignore my previous posts saying I made a healthy risotto without all the butter. it's time I had a glass of wine and checked on my healthy little leek and bacon flans in the oven..... '-))

I did refrain from making the sea scallops tonight, wrapped in bacon with a shallot and cider reduction with copious amounts of butter in the sauce.....

 
I just made some tonight. I dutifully started with 1 T. Well that was silly, so 1 more. I ended

up at about 4. But it was a large shallot that I started with as well.

But you know, standing there for 1/2 hour stirring, wears off at least 3 T. ...doesn't it?

 
Randi, you're Paula Dean, in denial! I just don't think that risotta is something that anyone makes

very often, so why count calories or carbs or grams of fat on those rare occasions when we do?
